I so so so appreciate that you made the sauce with chili powder instead of whole chilis. Ever since I moved from the US to Denmark I have been craving enchiladas but finding the canned sauce (lol I know) is a pipe dream, and sourcing dried chilis, while not impossible, is also not as easy as popping down to the ethnic food section of the grocery store. Thank you so much for the recipe, I'm super excited to make it!!

I really like enchiladas, but have been stuck in a rut of chicken enchiladas. I tried ground beef, but didn't like so much. This looks great, just needs chopped cilantro! ☺

Fantastic flavor and was a big hit. Full of flavor without being spicy hot. BUT, I really had trouble with the corn tortillas staying in one piece. So, last minute constructed lasagna-style instead of enchilada style. I'm not sure if it was the brand of corn tortillas or my faulty methods. =) As usual, great recipe and great video. I look forward to each new one.

Instructions say tomato paste…ingredients say tomato sauce. Already have the sauce can open, so will use sauce but it's a 15 ounce can. I will use tomato paste to made up the difference. Is 'paste' an error?

I'd love to see a recipe for enchiladas in Verde sauce! Can't do the red sauce…tears up my stomach. Way too acidic. Can I just sub the red for the green? Tomatillo's?
