    $5.00 for a few grains of saffron strings. You got a good deal. This stuff is insanely expensive normally. It's got to be the most expensive spice on the market. I am more likely to substitute with tumeric and some paprika. The other big problem with saffron is you can't keep the real saffron for any more than a month after opening the vial. Given it's extreme cost in western Canada it's rarely sold in most super market. You have to buy it at a specialty food retailer at a massively inflated price. This has got to be the most expensive spice on the planet.

    Just wanted to say that this was the recipe I used to break in my very first Instant Pot that my husband got me for Christmas. It was SO easy and the family loved it! I didn't have the chorizo, so I left that out, but it had SUCH good flavor even without it.

    Jeff you should try the Peruvian Arroz con Pollo, it's very different because the main seasoning is fresh coriander. Look up a Peruvian food restaurant that serves it and if you are into more "soupy" dishes (the Peruvian Arroz con Pollo is cooked until the rice is dry and tender) there is an alternative dish called "Aguadito" with pretty much the same ingredients but cooked to be served as a soup/rice stew. Look them up, you are missing out.

    I’m on my second plate. I was so speechless, I couldn’t type during my first serving. This is my second Instant Pot attempt (first was the beef stroganoff—also amazing). I can’t get over what’s happening in my mouth. Thank you for sharing! It turned out exactly like your video, and I have a ton of it—YAY!

    where i live i can't find the chorizo thats firm like you used. The kind here comes in a casing but it turns out liquid when you cook with it. i suppose i could use that but cut down the amount. could i use fresh cilantro at the end if i wanted to

    Apparently you don't know where saffron comes from also don't really understand the use of saffron in this dish unless it is more for color than flavor in that case I think I would use a little bit of tumeric instead seems like everything else would overpower the flavor of the saffron
