Veggie Garden Burger
3 stalks of Celery, finely diced
1 Onion, finely diced
1/8-1/4 C Water for frying veggies
Saute veggies in water until tender/limp
4 C Rolled oats
3 C Brown rice, cooked (1 C rice to 1 ¼ C water)
Mix oats and rice, add cooked celery – onion mixture.
Add:
Water (2C. + as needed to make dough that holds together)
1 tsp Pink Himalayan salt
2 tsp Parsley
2 tsp Bill’s Best Chik’Nish Vegetarian Seasoning
2 tsp Onion powder
1 tsp Garlic powder
2 tsp Italian seasoning
Stir, add additional water until a doughy consistency. Let rest for 10-15 mins. Stirring occasionally during resting period.
Using cling film/plastic wrap and mason jar lid and ring, form into patties and lay out on pan sprayed with nonstick spray. Can use an ice cream scoop too, but patties may crumble after cooking.
Bake at 350° F for 45 minutes, turning patties over at the 22 minute mark. Batch made 22 burgers using mason jar lid method to form them. Freezes well.
My family has been using this recipe for a year. It's our favorite go to meal. Freezing them came in handy when our daughter was born!
