Hi, Heather. I want to try this recipe, but, I can't eat corn. Do you, or any of your viewers, have any suggestions about what would be good to swap in place of the corn? Thanks.

This looks great. So do you serve this as a cold dish or do you heat it? I guess I should ask is it okay to heat in the oven. I am considering bringing this to a pot luck. Thank you!

This sounds awesome! I think I will make this for dinner tonight and have leftovers for a couple of days. I think my husband would eat this too! He’s not Whole Food Plant Based. Thanks for the recipe!

    Yay, a recipe!!!😊
By chance I made brown rice today in my Instant Pot, and not having made it for awhile I had to check the manual for the time. It did say 22 minutes, but just on a whim I decided to hit the "rice" button since I never use that feature. It came up 12 minutes on low pressure, so I decided to take a chance, and did a natural release which lasted 23 minutes after the 12 minutes (got busy). But the rice was truly perfect; just mentioning this because it might save a few minutes in future. I used 2.5 cups water & 2 cups rinsed and drained brown rice. Now to use the leftovers to make your casserole!

You look and act like you are feeling better, SOO thankful for that! You are a true inspiration, always look forward to your videos. I lost 80 lbs, then had two major surgeries. I had considerable long standing back issues following an accident long ago and after these surgeries, my back has been out and pressing on a nerve for 7 months. My doc had said my diet and healing weren't compatible and urged me to add more carbohydrates to my diet. This may have been good advice, but being me, I gained 30 lbs back since the first of June. I just hurt too much to want to add the strict dieting back into my life, and have been "waiting" to feel better first. It is so hard to even WANT to! Thanks for all your honesty, encouragement, recipes, etc. You are a blessing and encouragement to me and I'm sure to so many more!
