    Chef, Very nice recipe young man, here in Kentucky I can forage morels. Baby bellas, & ball mushrooms( they are as large a soccer ball, they have to be pure white in the center to be edible when cut in half, if not they'll make you sick) & we use aborio rice when grocer has it for the risotto
