One more great thing about the Instant Pot that food folks tend to forget. It cooks plant-based food to a softness and texture that is great for those of us who have problems using our dentures to eat with, or otherwise need to eat softer nutritious food for whatever reason. We need a champion, and I think you would be a wonderful person to speak out for us.

Made the soy curl noodle soup today. It has become an instant classic for us and will be made often. Thank you so much for sharing the recipe. I'm on a couple of Facebook groups that you post recipes. I tried to find it to comment there. Sorry but I couldn't find it. People you really need to try this soup. So much better than boring chicken n noodle.

OMG! You are just the person I have been looking for!!!!!! Long story short, I had high cholesterol years ago and I did a plant diet and it lowered it. Many years later, I didn't learn my lesson and I'm back over weight, high cholesterol and at risk for diabetes. I don't want to take medicine until I have gone to a plant food diet. I have been on my journey for a month now and I'm dragging my family into it. I don't have many recipes and I am getting tired of the same food. THank God I found you! I can learn how to further use my ip and eat more plants!!!!!!!!!!!!

Galangal – pronounced guh-LONG-gul. It's a root similar to ginger and used in Thai cooking. I LOVE Penzeys spices BTW. I'm lucky enough to live near a retail store of theirs.

I've been wanting to try the radish soup, but can't find radish greens (the bunches at my store are "leafless"). I figure a little bit of bitter greens might work….experimentation will tell. Still haven't used my Soy Curls…my omnivore side has been running the kitchen since the weather turned cold…..Thumbs Up for the video.
