    I know how that goes with the fire alarm. My fire alarm in my apartment is so sensitive that it would think that hot steam off of a hot plate of food means that there's a fire. 🙄

    It's like rolling up to Costco. Sirloin steaks, $35/kg (roughly $16/lb for the metrically challenged), or buy the whole sirloin slab and cut your own for $25/kg (roughly $11.50/lb). Sure it is more money up front. But buy one in the spring, and have steaks all summer. Same with filets. Far cheaper to buy the whole filet and cut them yourself, then buying filet steaks.

    Where I live on Vancouver Island I have never seen "Chuck-eye" steaks for sale anywhere… but then I live in a small City where there are only 3 main supermarkets. I wish we had a Costco…

    So you are saying that the grocery store is going to call these cuts 'chuck eye'? I don't believe I've ever seen that. Might they be incorporated into a portion of a chuck roast that one can cut a steak off of?

    We prefer to be called meat cutters, not butchers. Butchers do a hack job at cutting sub primals. You are right in a sense about the piece you are referring to as the Chuck roll but you should not have separated it. The steaks are actually called a center eye steak and would only use the first 2 to 2 1/2 inches for the center eye steak and use the Rest for Chuck roasts or Chuck steaks. Center eye steaks run around $9.29 per lb. As opposed to Chuck roasts and steaks at $6.59 per lb. And the reason is because you only get 2 center eye steaks from one Chuck sub primal. Also look out for places marketing them as Delmonico steaks. Please, if you see this anywhere, call them out on it.

    ive been eating chuck eyes for over a decade now. safeway and king soopers would cut them out when they were doing chucks for sale.. it used to be 4.99 but now its 7.99++
