I had no idea that a fresh red bell pepper was also called paprika.
No self respecting hungarian uses bell peppers and calls it paprika those are dumplings not noodles and chicken stock is bullshit

I'm from Hungary and original goulas is made from beef!!! Although you can make it from pork too, no harm. The Hugarian word gulyàs itself means the man looking after cows in the fields, that's where this dish is originated from, they made it first.
Good try though, you got a lot of things right, for example using lard, never vegetable oil, goose/duck fat are fine too. It's a soup – correct, that's something a lot of people get wrong, they think gulyàs is a stew. Also, well done for making your own 'noodles' (csipetke) from scratch.

Roel, authentic gulyás is basically made of beef. As others wrote below, it is a cowboys soup —> beef. To be fair, cheaper meat from pork can be used, but then it is not authentic anymore. By the way, the stew, known outside of Hungary as goulash is actually called pörkölt. You would lőve that! Cheers my friend. 😊👍

As a Hungarian I have to say: there is nothing authentic in this recipie… Never used in Gulasch -> Vegeta, Potatoes, stock cube… Even the way you cook it is wrong.

Congrats! Very close, but some little clarifications: To the meat: 30% onion, 5% tomato, 5% green paprika is the base. And of course garlic, if you love it. 🙂
In the Midwest, we make a goulash that is basically like spaghetti, but drier and with macaroni. Most people know it's not authentic, Hungarian goulash. Honestly I've eaten "goulash" my whole life, and it's never been authentic 😆

I am sure it taste awesome and many thanks for teaching the world how to make "csipetke" (noodles'), but the authentic "Gulyásleves" is made out of beef in a "bogrács" (cauldron (EN) heksenketel (NL) ) on open fire.
On the other hand, every Hungarian family has their own recipe. They often use pork (because it is cheaper) or half pork, half beef.
Btw, yours was the best I ever saw in NL. 🙂 (I live in here for 15+ years)
I know it is difficult to source "TV paprika" in NL, so using a bell peper is forgiven. 🙂

I sad to say that you got your goulash recipe wrong.
-First in general in Hungary you can make it many ways, so I think I just contradict myself really soon here. But mainly the thing is Goulash kind of means like a cattle horde, so I think You should make it from beef, and also when Kent said cheap beef, He is kind of right because most people here are poor, however the pasta he use is sacrilege 🤣. Also we don't really use "california paprika" here in goulash, We have "TV paprika" or (green hot paprika for spice)which we use in ratatouille as well or what it really means in Hun " stuffing paprika " because we put meat with rice in them. So generally as many house as many goulash recipe. Throw away vegeta, it is something from the 80-90s which some household started to use that time, but nowadays it's shame to use it. We got way tastier paste like piros arany, gulyaskrèm also the authentic way would be use beefstock from bones + some garnish.

Originaly gulash is from beef, I prepare it allways from NOT dry part of beef (leg or neck). Gulash word came from a hungarian word: gulyás what means cowboy (or cow herder). But with time it changed, after the world war II, of coarse the meat wasn't available at all, especially beef long time, so the original recepy was forgotten.
Fun fact( for me) … Vegeta is actually a dry veg mix from Croatia

To be precise there is no such thing as Hungarian Goulash made from pork, there is, however, Hungarian Gulyás made from beef shank – that’s the only original. Also, it is a soup, not a stew. Mostly when you see “goulash” outside Hungary it is some butchering of dish called pörkölt. In Hungary people sometimes substitute the beef for other meat and every family has their own favorite version of the dish. But if you want to express indignation towards others, please stick to a gulyás soup made from beef shank. Otherwise your indignation is baseless.
