I have been making twice baked potatoes for years. The family loves them, but your way is different (better) than mine – starting with the potato ricer v. stand mixer to fluff up the potato. Also, a little more work with all the goodies (onyo, mushrooms, different cheeses, bacon bits, heavy cream, sour cream, etc.), but your potatoes look delicious. I'll be making this weekend. Thank you for teaching me the "right way" to make twice baked potatoes.

My only question is the preparation of the bacon. Instead of slowly making them in a pan, I have found good results by placing thick-sliced bacon on a rack within a sheet pan. Then place it in an oven at 300 degrees (F) for 20 minutes and then turning them for another 20 minutes.
Any thoughts on this technique?

Nice … we call them "stuffed back" potatoes because you're putting the potato back in. 🤣 Doing the same thing with YAM, not sweet potato, but real yam is even tastier. Try it out Chef. You won't be disappointed.

I love twice-baked potatoes. One of my favorite "fancy" potato side dishes.
It's a hard decision to choose the favorite between these, or fondant potatoes.
