I haven't had ramen in years honestly. Not since going vegan and gluten free. This recipe looks easy to swap the soy sauce for tamari and pick rice noodles and I'm good to go.

I usually follow your recipes close as I can then add in whatever I have on hand. But with this particular dish, I think I want to try the whole thing, just like you have done it. They need to serve this at my local Ramen shop. I had their version of the Veggie man and it was a disappointment..
It won't taste the same but it would be a lot easier to just blanch the the tofu and vegetables in the boiling water
