You have to saute your garlic and red onions, my secret is sweet pepper saute also. Then add your meat and season with salt pepper soysauce vinegar and bay leaf. And don't forget the sugar atleast a table spoon.. Cook it slowly on medium heat reduce the sauce more gives more flavor.

My father uses calamansi instead of vinegar to marinate the meet and it still tastes good. My lolo on the other hand, cooks adobo with a sweeter side.

Best way to reheat the adobo after you let it sit for a day in a fridge to develop more of the flavors? Especially with chicken id be worried itโd get dry from reheating it.

Adobo was originally a vinegar dish, not a soy sauce based dish. I actually tried making one with zero soy sauce, and just using sea salt to taste. A little sugar at the end if necessary. Fantastic
Mine's ended being too salty as well. Been doing the same mistake too. I'll try adding more vinegar instead next time :DD
