    I'll take the two hours myself because that particular dashi granules brand doesn't sit well with me as it makes everything taste like (to me, at least) water from a lake. Whereas a good dashi to me tastes primarily of miso and kombu rather than fish.

    I am so glad you cook for Claire. I grew up with my dad being the cook for our family. And my mom was raised with her grandfather cooking. I can't find any guy to cook for me.☹️ Plus I am 47 so I probably never will. At least I can learn to make your yummy food! 😄

    Hey guys… I don't particularly like udon ( I think they are too chewie ) and I think that a different noodle would work for this recipe, but I thought I would ask before I tried something different…Any suggestions?     for those people who want to know the ingredients and don’t want to have to go to their website,

    Ingredients:

    1/2 yellow onion
    1-2 green onions
    1 small knob of ginger
    10.6 oz (300g) thinly sliced beef (Beef for shabu shabu, sukiyaki, or bulgogi)
    1 tbsp neutral-tasting oil
    2 servings udon noodles

    Sauce for Beef:

    2 tbsp soy sauce
    1 tbsp sugar
    1.5 tbsp mirin
    1/2 tsp (2g) grated ginger

    Dashi Broth:

    4 cups (960ml) water
    2 tbsp soy sauce
    2 tbsp mirin
    1.5 tsp Japanese bonito soup stock (hondashi)

    Toppings (optional):

    Japanese fish cake (narutomaki)
    soft-boiled egg

    I'll tell you what that is a beautiful looking soup and I'm going to make that. I would love to know exactly what a Japanese fish cake is I've never had that.

    I am positive this is super delicious and I love soup when it's cold out I just had some food on noodle soup tonight and I love udon noodles!!
    Sadly I had no green onion in my house. 🤣

    first off, stop making me hungry, PLEASE. these recipes have my belly rumbling.
    If i could make a suggestion, I was hoping to see some thing you create with low calorie shirataki noodles. Teach us westerners the best way to get rid of that awful fishy smell, as well as a delicious recipe or two for the low calorie diet, for us fatties trying to slim down, without sacrificing flavor. i dont want to look like Santa on vacation anymore.
