    Hardtack was used more as a flour replacement than a cracker. To thicken a soup or stew it was broken or crunched up and added in to soak in there, no one ever tried to bite into one. Because flour would go off and get bugs in it easily they knew flour mixed with a little water and salt then baked low and slow for days, hardtack was something that could go on long voyages, etc. Also there were recipes for crunchy baked things similar to crackers in England and Europe long before today's crackers. Yes, Hi-Hos and Hydrox were both really good. First time I saw Oreos in particular I said "those are Hydrox!" Fake apple pies are delicious made with just plain old saltines. You don't even need Ritz for that. I'd rather make the saltine version than the real thing, it's easier and comes out nearly identical except for the "apple" isn't chunky. The Ritz do add a little bit of a buttery taste and kind of a "fake" taste but saltines make a mock apple pie that to me is closer to the real thing.
