    Bobby, you can eat the inside of steamed artichoke leaves, put a leaf of the artichoke inside your mouth, and scrape it with your teeth. Btw, you can make a diabetic friendly dip, and dip before eating.
    I’m Italian, we stuff them with a breadcrumbs mixture, which is not diabetic friendly to do so.

Basically she is limited to what she eats because it's difficult to manage low carb, high fiber, low fat, low oxalates and still make food enjoyable. Plus, she's 80 and picky. I am at my wits end trying to get her to eat healthier.

For instance, growing brassicas like broccoli etc, they are highly susceptible to a variety of pests, namely aphids and cabbage worm, just because there is an organic option doesn’t mean it’s not treated with organic pesticides suck as BT and other bacteria based pesticide. And you’re missing out on the joys of eating a steamed artichoke through the petals to the heart. And certainly fresh is better, right?

    Sorry my dear, I absolutely detest avocados and artichokes. I am a meat and three veg gal. Don't use over produced oils only butter and olive oil and haven't for years. Garlic and chilli are two of my best friends for dressing chops and steak. I have a good herb garden and if you harvest all summer then freeze or bottle to use all winter. I am trying honestly.
