    Lovly, some of my favourite ways to do potatoes. There is a third option to get dry cooked potatoes though & that's the microwave. It does a very good job dauphine/choux potatoes.
    Often if I do the baked/oven prep method, I'll halve the potato length ways, scrape out the flesh, do all the mixing [sometimes adding ham or cooked onion cut finely]. Then pipe it back into the skin & finish in the oven; sort of a fully loaded dauphine baked potato.πŸ₯”πŸ˜‹

    I live in eastern Europe and we had French potatoes in the supermarket for a few years – very yellow and delicious but it was never mentioned a sort. Just french potatoes. These are very pale in your video. I had no idea there are so many sorts of potatoes. :))
