Living in Lancashire myself, Lancashire hotpot is rarely seen on menus nowadays 🙁 it has to fight of chips, pizza's, Biryinai etc. Saying that, I have never made a hotpot! so from this day forth, you heard me when I say I will make myself a HOTPOT. Looking forward to it.

I've made this with beef instead. We can't even buy 'lamb' in our grocery stores. Other than the NE in the US where there's a large Jewish population, eating lamb isn't really done. But it's sure delicious with beef.
