    INSTRUCTIONS (Omitted above):

    Drizzle Olive Oil over ribs & coat with seasonings – let sit on a rack 30 mins
    Heat Dutch Oven (or heavy pan) & add Olive Oi (or Duck Fat) to pan & sear meat on all sides
    Remove meat and add mirepoix to pan + salt & tomato paste
    Add red wine to deglaze
    Add beef broth & a little salt
    Add Thyme, bay leaf and pepper and bring to a boil
    Add meat to liquid
    Cover and cook in 375 oven x 1.5 hours or til meat falls off bone (up to 3-4 hrs)
    Strain the liquid to make the gravy – optionally may thicken if desired
    Plate with mashed potatoes & green beans & add gravy/ sauce

    I am going to try this in an instant pot – hope it works because this sounds delicious!

    Note: Duck Fat is amazing for browning & flavor but very expensive ($15 for 11 oz jar) but can be kept a long time without refrigeration. So if you want to save used fat be sure to separate & strain it otherwise it will spoil. I bought mine to make Duck Confit and it took 6 jars = $90 – I wasn't expecting it to cost that much!

    Instant Pot Tip: You do not need all that duck fat from browning because the fat from the meat will be plenty. I made the mirepoix using saute mode with a little butter instead then added the liquids and brought it to a boil before adding the meat onto a rack – be sure to stagger the meat if you need more than one layer. Used Manual mode on High x 1 hr. Check it then add more time if needed. Remove meat and put it back on Saute mode if you need to reduce the liquid or to make a gravy.

    PS: Don't spend a lot of money on the Cabernet – Gallo makes a decent one for less than $8 for 1.5 L – and it is also great for the cook!

    I tried this recipe last Sunday. I am extra too, so i used duck fat LOL! I followed the recipe exact and boy those short ribs were delicious. I will be making these again. Looking forward to trying more of your recipes.
