I made this yesterday, it's amazingly delicious. I subbed creminis for all of the mushrooms and added a bit of fresh ginger to the beef but otherwise followed the recipe closely. My only regret is that we ate it all and I have no leftovers. 🤣

You can slice flank super thin on a bias also at an angle, marinate a while and it turns out super tender. After stir frying the meat and mushrooms, grab your kitchen torch and flame it, it gives some nice char and artificially induced “wok hei “…

Great recipe! One tip I can tell you is do egg yolk first then stir fry veggies from white to yellow to red. Then meat. In that way less time wiping the pan. That’s how most Korean families do. Of course always you can do however you want.

It is recommended to not consume more than 5g salt every day. If I look at how much salt you dump in there at every step you are consuming to much for sure. You are risking heart problems if you continue like that.

For anyone trying this, I recomend less pan frying the veg, and stir frying it together at the end with the noodles.
It's a stir fry noodle dish, and I actually never made or seen a recipe that doesn't fry the noddles after boiling them.
Also, you can soak the noddles in cold water about 30 min while you're preping the veg and boil it about 2 to 3 min for more bouncy texture!

Hello, I'm a South Korean, and japchae is a traditional Korean holiday food that takes a lot of hands, but it's delicious, and it's amazing to make traditional Korean food in a foreign country. Thank you for promoting Korean food, I always watch videos well.
