You might try using the Blackstone wind guards on the back and sides or at least on the sides if the fans cause you to have a heating problem on the griddle itself. Also if the grease drain does become an issue even though you did a great job modifing it, I would consider closing it off. I have done that on one of mine because I was cooking as many as 120 eggs at one time. I just use one of my spatulas to scoop up grease and scraps and put them in a mixing bowl that I keep setting near by. For the PC fan on the right side of the blackstone, you could try the coolerguys fan you used on the ice maker. Unless you are already using it somewhere else.
For the Tracker for the Puppy… I have 2 red heelers and we us the apple air tags on them. Amazing trackability and also if the tag comes off by chance… the tag dings when you ping it.
Get a Wireless dual Lavaliere Microphone and 6 or 8 Channel Audio Sound Mixer. Plug the receiver(s) into the mixer, then plug the output into your camera Audio Jack

We shred our own cheese, buy 3 lb blocks at Sam's and put it through the food processor w/the shredding blade. So easy and no extra junk that's in the pre-shredded cheese!

Don't sweat the cheese, cut the mold off and use rest. take out of plastic package,wrap in paper towel
