    You might try using the Blackstone wind guards on the back and sides or at least on the sides if the fans cause you to have a heating problem on the griddle itself. Also if the grease drain does become an issue even though you did a great job modifing it, I would consider closing it off. I have done that on one of mine because I was cooking as many as 120 eggs at one time. I just use one of my spatulas to scoop up grease and scraps and put them in a mixing bowl that I keep setting near by. Love you channel. looking to buy the camera system you installed on your tractor. Need one on mine.
