Peanut sauce? Yes, please! (Also, I made the chickpea salad last week. My hard-to-impress-if-it's-meatless husband couldn't stop raving. He even asked for the recipe so he could share it with colleagues.)You KNOW you've done something right when a dish becomes a water cooler topic!)

I learned something new today ! I've been frying tofu in a cast iron frying pan. It does get crispy and brown on the outside. But, coating it with cornstarch, as you have done, would probably elevate it to 'restaurant quality' and get a lot crispier on the outside. I do a tofu dish with stir-fried veggies, the fried tofu, Asian noodles (or even a brick of the ramen-type of noodles) and then a homemade peanut sauce. Sometimes, I use Sunbutter (sunflower seed butter made here in Fargo, North Dakota) instead of peanut butter, and that is tasty, as well.
