Looks yummy! My hubby is Moroccan so these flavors are quite familiar! One thing though… I never saw dates cooked in Tagine, especially Medjool ones. Those are eaten as appetizers at the beginning of a meal. Dryer dates, more fibrous dates maybe. More commonly , you will see raisins, apricots or prunes in tagine or couscous.
I make this in my instapot, but different version. Gonna try this version in my instapot.
What happened to your tip about not just plopping spices into a dish, but adding some oil and sautéing them first?

The spices in Ras al Hanout can vary a lot, it translates to something like "top shelf". Can i ask what was in the blend you used?
