Interesting idea for sure. At first I was gonna say add some poblano's but you already had jalapeno in is. You could add some ham for a better meat thickness to it all, or you could go crazy and add some feta cheese at the end for a bit of a salty/sweet bit At the very least you could add some sharp cheddar for an almost Au gratin experience with the potatoes. When it's about done plop in some eggs and sprinkle some really good cheddar cheese and cook the bacon more before you add any other ingredients. I like crispy bacon.
