    If I'm feeling brazen, I sometimes brown the chicken in a separate pan before adding it. Sometimes you want that extra maillard reaction, especially if you're waiting for something like lemongrass flavour to develop before you remove it.

    I usually view cooking videos for two reasons, one is to understand techniques and potential ingredients (when I usually view numerous videos for the same recipe), and two, while I'm cooking or just before. In those latter times, I zoom through videos with keyboard numbers and the forward and back arrow keys while paying close attention to what's going on. In those latter times, it doesn't matter how long a video is or what content is in it. If I'm looking for onions sauteeing, I find it quickly.
