    Lard is absolute magic. It's about time people started using that again. It's expensive but worth every penny. (or dollar.) It brings food out so crispy. It takes the heat and doesn't smoke.

    Boil them until just about to break. Pop them in the fridge for an hour, then put them in the oven and turn twice. I use groundnut oil. My late mother used beef dripping and they were delicious.
