Recipe:
4-5 lbs. Frozen Italian Meatballs(or vegetarian, or vegan meatballs)
1 can (16oz) Sloppy Joe Sauce (Hunt’s Manwich Sauce)
2 cups BBQ Sauce (I used sweet baby ray’s)
2 cups Grape Jelly (Welches concord grape jelly)
1/2 cup ketchup
1/2 cup sweet chili sauce.
Place all ingredients in crock-pot, turn on low heat for 8hrs or more. To make them faster you can use high heat for 2hrs or until the meatballs are hot.
You can also use vegetarian or vegan meatballs such as those from Quorn, they work well for this recipe and I’ve made mini patches for parties for non-meat eaters.

Perfect your pork loin roast in your Instant Pot for a simple dinner any night of the week! Five ingredients, nice and easy.
INSTANT POT PORK LOIN
2 lb. Pork loin roast, boneless
Kosher salt, as needed
Black pepper, ground, as needed
1 t. Olive oil
1/2 C. Vegetable broth
1. For the Pork Loin: Season pork with salt and pepper
2. Set Instant Pot to Sauté. When setting reads HOT, add oil
3. Add pork and brown on all sides, about 2 minutes per side
4. Cancel Sauté setting
5. Add vegetable broth, close lid with the pressure vent closed and set Instant Pot to Meat/Stew. Let cook 20 minutes
6. Quick-release pressure and let pork rest five minutes in Instant Pot
7. Open lid, remove pork, set on cutting board, check for internal temperature of 145ºF and let rest for three minutes
8. For the Pan Sauce: Using remaining cooking liquid, set Instant Pot to Sauté and reduce by half
9. To serve: Thinly slice pork and spoon pan sauce over slices
Option: Add your favorite seasoning with the salt and pepper.

Instant Pot Corn:
Push the off button when you are done cooking the corn. They can sit in the hot water while you get the rest of dinner ready, but you don’t want them to cook any more, just to be kept warm.
Just remember when using the Instant Pot, it takes 10-20 minutes to pressurize!

2 tablespoons vegetable oil
1 large sliced white onion
1/4 teaspoon salt
2 tablespoons garlic
salt and pepper to season roast
5 to 6 pound pork loin
1 1/2 cups hard cider
If you are using hard cider, measure out your hard cider, and allow it to go flat while you prepare the remaining part of the recipe. Set the Instant Pot to saute. Add 2 tablespoons of vegetable oil to the pot. Heat oil until it is hot. Add sliced onion, garlic, and a pinch of salt. Saute until the onions are almost translucent. Saute roast on all sides until it just begins to brown. Add flat hard cider, place the lid on the Instant Pot. Pressure cook for 55 minutes on the manual setting. Once the roast has finished cooking you can perform a quick release.

The pot is non-stick so use heat proof plastic or wooden spoons so you don’t scratch the surface. The max line is at ⅔ full, don’t fill above it. If you’re using foods that expand when cooking like rice or beans, don’t fill the pot more than halfway. For the unit to pressure cook, you’ll need at least 8 ounces of water in the pot.
