Are you looking for a new way to prepare a pork loin? Why not try this easy to prepare Apple Cider Pork loin. This was originally posted on http://www.copykat.com/2017/01/22/instant-pot-apple-cider-pork-loin/

2 tablespoons vegetable oil
1 large sliced white onion
1/4 teaspoon salt
2 tablespoons garlic
salt and pepper to season roast
5 to 6 pound pork loin
1 1/2 cups hard cider

If you are using hard cider, measure out your hard cider, and allow it to go flat while you prepare the remaining part of the recipe. Set the Instant Pot to saute. Add 2 tablespoons of vegetable oil to the pot. Heat oil until it is hot. Add sliced onion, garlic, and a pinch of salt. Saute until the onions are almost translucent. Saute roast on all sides until it just begins to brown. Add flat hard cider, place the lid on the Instant Pot. Pressure cook for 55 minutes on the manual setting. Once the roast has finished cooking you can perform a quick release.

4 chicken thighs
4 chicken legs
2 tbsp. olive oil
1½ cups BBQ Sauce

1. Place the inner pot into the Pressure Cooker.
2. Push the CHICKEN/MEAT button. Add oil. Brown chicken on all sides.
3. Pour the BBQ Sauce into the pot and stir to coat the chicken with the sauce.
4. Place the lid on the Pressure Cooker and lock. Switch the Pressure Release Valve to Closed.
5. Once the timer reaches 0, the Cooker will automatically switch to KEEP WARM. Press the CANCEL button. When the steam is completely released, remove the lid.
6. Serve.

The pot is non-stick so use heat proof plastic or wooden spoons so you don’t scratch the surface. The max line is at ⅔ full, don’t fill above it. If you’re using foods that expand when cooking like rice or beans, don’t fill the pot more than halfway. For the unit to pressure cook, you’ll need at least 8 ounces of water in the pot.
You saw how the cooker performed on steaming beans, cooking rice and making lamb curry.

Easy Buffalo Wing Recipe:

3lbs chicken wings (cut into drumette and wingette sections)
1 cup of franks red hot sauce
1/2 cup of butter

Add 1 1/2 cups of water to the Instant Pot liner. Steam wings in the Instant Pot using a steamer basket or trivet on high pressure (using the “Steam” setting) for 10 minutes. Allow to NPR for at least 5 minutes and quick release any remaining pressure. Place wings in a single layer on a foil lined and lightly oiled cookie sheet. Crisp wings up under the broiler in your oven for 4-5 minutes per side or until skin is browned and crispy. Melt butter in a microwavable bowl or saucepan and whisk with Franks red hot sauce until combined. Dunk the crispy wings into the sauce mixture to coat and enjoy!

2 limes
2 cups frozen corn
2 large garlic cloves
3 large yellow or white onions
1/2 red onion
14 oz can low sodium black beans
2 cups brown rice
8 cups any low sodium stock/broth or bouillon cubes
9 oz low sodium tomato paste
2 lbs sweet potatoes
14 oz can full fat coconut milk
4 tbsp maple syrup or honey
3 tbsp soy sauce
1 tbsp apple cider or white vinegar
2 tsp liquid smoke https://amzn.to/2HgLiBg (1 tsp smoked paprika or omit)
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
2 tbsp fish sauce
1 tbsp red chili paste
3 kaffir lime leaves (optional)

RECIPE #1 INSTANT POT CILANTRO LIME CHICKEN

This recipe feeds 6-8 people. You can freeze leftovers or cut rice and water in half and keep same cook time.

3 large chicken breasts
Juice from 2 limes
2 cups frozen corn
2 minced garlic cloves
1/2 red onion, minced
14 oz can low sodium black beans, rinsed and drained
2 cups brown rice, rinsed and drained
1 tsp cumin
1 tsp salt
Pepper to taste
2 cups low sodium stock
1 bunch fresh cilantro, finely chopped

1. In a large resealable bag, add all ingredients except stock and cilantro. Close and swish everything around to mix.
2. Freeze for up to 3 months standing up.
3. When ready to cook run under warm water for 15 secs and add to Instant Pot with stock or water.
4. Cook from frozen for 22 mins on high pressure. Do natural release.
5. Add cilantro, maybe more lime juice and stir. We served it with salsa and yogurt.

Pulled Pork in the 6 QT Power pressure cooker.
Cooking time on hi, 60 minutes. Release pressure about 10 minutes after done.

Ingredients as follows.
2.5 pound boneless pork roast. Cut up.
2 cups water or chicken stock your choice.
2 tablespoons apple cider vinegar.
1 teaspoon liquid smoke.

in 6 qt power pressure cooker add pork roast cut up in large pieces.
brown the meat. Then add all ingredients.
set timer on hi for 60 minutes.
When done drain liquids and add BBQ sauce of your choice, or none at all! It’s that good!
