Ingredients:
1 c stock {I used chicken}

3 eggs + 1 tb heavy cream
1/2 c finely diced veggies
Instructions:
Bring stock to a boil.
Whisk in eggs/cream/veggies.
Clamp on the lid and steam for 3-5 minutes of medium/low.
Btw, you don’t need Korean earthenware to create this. Cast iron cookware will do (and a stainless steel pot if that isn’t available). The one I’m using is my mother’s which she bought back with her from Korea but you can find it similarly here: http://amzn.to/2vYYXtb

Today we are making a Mississippi Pot Roast Recipe on the Pit Barrel Cooker. Mississippi Pot Roast is traditionally cooked in a Crock-Pot slow cooker, but we’re adding some smoke and cooking this chuck roast on the Pit Barrel Cooker.
We’ll start by smoking the roast. Then, we will add the Mississippi Pot Roast ingredients and finish the cook.
Ingredients
• 2 teaspoons Tsang’s oil or olive oil
• 3.3 lb chuck roast
• 1 package of dry ranch dressing mix
• 1 package of dry au jus gravy mix
• 1 stick butter, cut into 6-7 pieces
• 6 oz Pepperoncini juice
• 12 – 14 Pepperoncini peppers
• 2 tablespoons Meat Church Holy Cow Rub; more info here https://www.armadillopepper.com/products/meat-church-holy-cow-bbq-rub (you can substitute salt and pepper)
Recipe Instructions
1. Rub the oil on both sides of the roast.
2. Season all sides of the roast with the Meat Church Holy Cow rub.
3. Add oak wood chunks or your favorite wood to the Pit Barrel Cooker.
4. Place the roast in the pre-heated Pit Barrel Cooker and cook for 1.5 hours.
5. Remove the roast from the Pit Barrel Cooker and place in a disposable aluminum pan. Pour the Pepperoncini juice in the bottom of the pan.
6. Sprinkle the ranch dressing mix and aus ju gravy mix on the roast, then add the butter and Pepperoncini peppers on the roast.
7. Cover with foil, place back in the Pit Barrel Cooker and cook for 3 additional hours.
8. Remove from the Pit Barrel Cooker and let rest for 15 minutes.
This Chili-Lime BBQ Jackfruit is seriously SO good you guys. It’s perfect in burritos, tacos, and vegan ‘pulled pork’ sandwiches! I like making a big ol’ batch of this at the beginning of the week and keeping it on hand for all sorts of yumminess. 😍 (OPEN FOR FULL RECIPE)
– two 20 oz. cans of jackfruit (in water or brine)
– 1/2 c. vegetable broth
– 1 white onion
– 3 – 4 cloves of garlic
– 1 tbsp. chili-lime seasoning (chili powder works too!)
– 2 tsp. cumin
– 1 tsp. oregano
– 2 tbsp. taco seasoning (homemade or store-bought)
– 1 tsp. salt
– 1/4 tsp. liquid smoke (optional)
– juice from 1 lime
– 1/2 – 3/4 c. your favorite BBQ sauce
– 1/4 tsp. black pepper
– 1/4 c. cilantro, chopped (optional)
Directions:
– Drain and rinse your jackfruit.
– Smash each piece and pull it apart with your fingers until all of the jackfruit is nicely shredded. Some bigger pieces are totally okay – they’ll break down as you cook the jackfruit.
– Heat a large pot on medium heat.
– Slice your white onion into half moons (aka semi-circles).
– Once your pot has heated, add 1/2 cup of vegetable broth as well as the sliced onions and cook for 5 minutes, or until onions are soft and slightly golden.
– While the onions are cooking mince up your garlic cloves.
– Add the garlic to the pot, stir well, and cook for another 30 seconds or so.
– Add in the shredded jackfruit as well as the chili-lime seasoning, cumin, oregano, taco seasoning, salt, liquid smoke, and lime juice and mix well.
– Let this cook for about 5 minutes to let all of the spices get nice and toasted and soaked into the jackfruit.
– Now it’s time to add the BBQ sauce! So add that in, stir everything together, pop a lid on, and let it simmer on med-low for 15-20 minutes, stirring occasionally.
– Add the black pepper and chopped cilantro and mix well. Enjoy!

CHINESE CHICKEN NOODLE SOUP
1 chicken thigh
200 grams noodles (sweet potato noodles)
3 tablespoons cooking oil (peanut oil or other)
2 tablespoon ginger
6 cloves garlic
1 small carrot sliced
1 1/2 litres water (6 cups)
Salt to taste
Soak noodles in cold water for 30 minutes. This is for sweet potato noodles in this recipe. Other types of noodles may require different prepartion.
Set Instant Pot on “saute” setting on high heat. Add cooking oil. Add ginger, garlic and carrots. Stir fry for 1 to 2 minutes. Add
chicken thigh and sear on both sides. Total saute time: 10 to 20 minutes.
Add water to make the broth.
Set at high pressure setting and cook for 5 to 15 minutes, longer for more flavor After finished cooking, set the Instant Pot to “saute” setting again. Set at high heat for 10 minutes. Put the noodles in the broth. Take out chicken thigh and shred the chicken meat and put back into the broth. The sweet potato noodles in
this recipe take 5 minutes to cook. Other noodlers may take longer to cook. Serve the chicken noodle soup in a nice bowl. Enjoy!
Note: If you cook this recipe in an ordinary pot, increase the cooking time 4 times as long. The noodles you add in the last 5 minutes, if you are using the sweet potato noodles. Check out some of my other Chinese Chicken Noodle Soup recipes for cooking instructions.
