Smoked Mississippi Pot Roast Recipe in the Pit Barrel Cooker

Today we are making a Mississippi Pot Roast Recipe on the Pit Barrel Cooker. Mississippi Pot Roast is traditionally cooked in a Crock-Pot slow cooker, but we’re adding some smoke and cooking this chuck roast on the Pit Barrel Cooker.
We’ll start by smoking the roast. Then, we will add the Mississippi Pot Roast ingredients and finish the cook.
Ingredients
• 2 teaspoons Tsang’s oil or olive oil
• 3.3 lb chuck roast
• 1 package of dry ranch dressing mix
• 1 package of dry au jus gravy mix
• 1 stick butter, cut into 6-7 pieces
• 6 oz Pepperoncini juice
• 12 – 14 Pepperoncini peppers
• 2 tablespoons Meat Church Holy Cow Rub; more info here https://www.armadillopepper.com/products/meat-church-holy-cow-bbq-rub (you can substitute salt and pepper)
Recipe Instructions
1. Rub the oil on both sides of the roast.
2. Season all sides of the roast with the Meat Church Holy Cow rub.
3. Add oak wood chunks or your favorite wood to the Pit Barrel Cooker.
4. Place the roast in the pre-heated Pit Barrel Cooker and cook for 1.5 hours.
5. Remove the roast from the Pit Barrel Cooker and place in a disposable aluminum pan. Pour the Pepperoncini juice in the bottom of the pan.
6. Sprinkle the ranch dressing mix and aus ju gravy mix on the roast, then add the butter and Pepperoncini peppers on the roast.
7. Cover with foil, place back in the Pit Barrel Cooker and cook for 3 additional hours.
8. Remove from the Pit Barrel Cooker and let rest for 15 minutes.
9. Remove the foil and serve!

My recipe has a couple of small variations. Lipton onion soup mix instead of au jus and Kerrygold garlic and herb butter instead of regular butter. I've never tried it on the PBC, but after watching you make this one, I'm gonna half to try it this way next time.
Jeff I'm making this before I leave treatment in the morning but I'm gonna make on the crock pot. Any suggestions….im gonna sear put on crockpot use everything in have except the last part of meat seasonings also gonna boil some egg noodles to meat over instead of smash taters? What u think

Mississippi pot roast is awesome. I made a version recently that is similar but I called it Alabama pot roast. I shot a video but the pics came out terrible so I gotta make it again! haha. Cheers man.
