meatloaf:
2 pounds ground chicken
1 cup dried breadcrumbs
2/3 cup your favorite BBQ sauce, divided
1/2 cup onion, finely chopped
2 eggs
2-3 cloves garlic, minced
2 tsp Worcestershire sauce
2 tsp dried parsley
2 tsp salt
1/2 teaspoon freshly ground black pepper
For the potatoes:
3 lbs potatoes, chopped
1 cup chicken broth
1/2 cup heavy whipping cream or half-and-half
4 oz cream cheese
4 tablespoons (1/2 stick) butter
Salt and pepper, to taste
In a large bowl, mix together eggs, breadcrumbs, onion, garlic Worcestershire sauce, 1/3 cup on the bbq sauce, parsley, salt and pepper and stir. Mix till bread crumbs are moistened. Add in your 2 pounds of ground chicken and mix with your hands until evenly combined. Place mixture in a disposable loaf pan or form your own out of aluminum foil.
Arrange potatoes in the bottom of the Instant Pot or Crockpot Express cooker in an even layer. Pour broth over the top. Place the wire rack that comes with your machine over the potatoes. Set meatloaf on top.
Close lid, make sure steam release is set to sealed, and set to manual mode (on high pressure) {For the Instant Pot} or on BEANS/CHILI in you Crock pot Express Multi cooker for 25 minutes. Once done, use quick release to release pressure.
Remove meatloaf drain off any extra liquid. Brush or drizzle over the remaining BBQ sauce and, place under broiler in oven for 3 minutes to caramelize.
Meanwhile, add heavy cream or half-and-half, cream cheese, butter, and salt and pepper to the potatoes in the Pot and mash until creamy. Enjoy!

Ingredients:
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
2 teaspoons dried oregano
2 teaspoons dried thyme
1 teaspoon chili powder
2 teaspoons salt
1½ pounds baby back ribs (about 1 rack), cut into 3-rib sections
1 to 2 tablespoons olive or vegetable oil
½ onion, chopped
1 bay leaf
Sauce:
1 cup beef stock
1 cup tomato ketchup
2 tablespoons molasses
1 tablespoon cider vinegar
1 tablespoon tomato paste
½ teaspoon soy sauce
Directions:
1. Combine the first 6 ingredients to make the dry rub spice blend, and rub the spice blend all over the rib sections.
2. Pre-heat the pressure cooker using the BROWN setting.
3. Add the oil to the cooker and brown the ribs in batches. (Alternately, you can do this in a pan on the stovetop.) Remove the ribs and set aside. Add the onion and bay leaf to the cooker and sauté until the onion starts to soften slightly – about 5 minutes. Pour in the beef stock and place a rack in the bottom of the cooker. Place the browned ribs on the rack, and lock the lid in place. It’s ok to pile the ribs on top of each other in an uneven manner, or to place the ribs in standing up vertically.
4. Pressure cook on HIGH for 30 to 40 minutes.
5. While the ribs are cooking, combine the ketchup, molasses, cider vinegar, tomato paste and soy sauce in a small bowl.
6. Let the pressure drop NATURALLY and carefully remove the lid. Remove the ribs and let them rest on a side plate. While the ribs are resting, pour the ketchup mixture into the cooker with the cooking liquid and return the cooker to the BROWN setting. Simmer the sauce ingredients for about 5 minutes and then return the ribs to the sauce to coat and serve.

Easy RICE COOKER Chinese BBQ Pork | Char Siu Pork | NO OVEN NO OVERNIGHT MARINATION
In this video we will learn how to make Chinese BBQ pork using a rice cooker. Super easy and delicious.
***WHAT YOU NEED***
10oz/300g pork shoulder (or pork belly, just avoid lean meat which will make the result too dry)
1 tablespoon maltose (or honey)
BBQ SAUCE:
2 tablespoons ready made BBQ sauce = Char Siu sauce https://amzn.to/2FPog2I
1 tablespoon oyster sauce
1 tablespoon cooking wine (the best is to use rose cooking wine)
1 tablespoon honey
2 cloves of garlic mince
Optional: 1 teaspoon of red dried yeast powder https://amzn.to/2UulObi (=red fermented rice =red yeast rice = 紅麴米) to add red colour to the pork
***HOW TO MAKE***
– Cut the pork shoulder into 2 smaller pieces so that the meat can be cooked evenly and thoroughly
– Put the pork into a sealable bag, add the sauce, massage well
– Put it into the fridge and marinate for 1 hour
– After 1 hour, add the meat into the rice cooker. Switch to cook mode and cook for 1 minute
– After 1 minute, flip over the meat to the other side and cook for another 1 minute
– Keep flip over under the meat is done. It depends on how powerful and how thick the meat is. It took me 15 minute to have the pork done. Then set aside the meat
– Add 1 tablespoon of maltose in the rice cooker, add the meat and make sure the surface is coated with the maltose.(Maltose can give very nice shiny glaze to the BBQ pork)
– Transfer to the serving plate. Cut the BBQ pork into pieces
[PREPARE THE SAUCE]
– Add the rest of the BBQ sauce in the sealable bag. Add 1 tablespoon of water. Cook under the sauce is thickened
