These sweet potato stacks are a side dish that’s not to be missed.

Ingredients:
2 large sweet potatoes
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp garam masala
1/2 tsp salt
2 tsp mustard
Ingredients for the dipping sauce
1/2 cup vegan yogurt
1/2 tsp salt
1/2 tsp black pepper
Juice of 1 lemon
Cilantro to garnish
Preheat the oven to 350 degrees F/180 degrees C. Slice the sweet potatoes into thin circles and transfer them to a large mixing bowl together with the olive oil, paprika, garlic powder, garam masala, salt and pepper. Stir together well. Lightly grease a muffin tray, and stack the sweet potato circles inside each dip. Cover with foil, then bake for 45 minutes. Meanwhile, make the sauce by stirring together the vegan yogurt, salt, pepper and lemon juice. Serve the sweet potato stacks with the sauce immediately, garnished with cilantro.
