Crispy “Tuna” Rice 🍅| By @eatmoreplants.no
Recipe:
Ingredients (4 servings)
2 cups cooked sushi rice
3 big tomatoes
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp rice vinegar
1 tbsp vegan mayo
1-2 tbsp sriracha
Topping:
1 nori leaf
Sesame seeds
Spring onion
Instructions:
1. Cook sushi rice according to package instructions.
2. Shape into wanted size and fry in some sesame oil until golden brown and crispy.
3. Boil your tomatoes with the skin for 10 minutes. Peel off the skin and remove the seeds from the tomatoes. Chop into small cubes and place into a small bowl.
4. Add soy sauce, sesame oil, rice vinegar, vegan mayo and sriracha to the chopped tomatoes. Mix well. Press out some of the liquid using a strainer.
5. When the rice is nice and crispy add the tomatoes on top of the rice. Sprinkle with sesame seeds, spring onion and finely chopped nori leaf. Enjoy!
