Hi everyone! At the 1:06 point in the video, I use the term "confectionery sweetener," which has led to some confusion, as noted in the comments. To clarify, this refers to one of my usual sweeteners, which is Lakanto Gold, a monk fruit/erythritol blend sweetener. I am NOT using, and never do use, any of the sugars, such as white, cane, coconut, agave, etc., because all of these have a high glycemic index. You can also cook it down with raisins for 35 mins. Just enough dairy or no dairy milk to cover the raisins. Don’t throw out your raisins. Use them in a keto friendly treat!

I followed this recipe yesterday and it came out delicious. After it cooled, I put it in the refrigerator in a plastic airtight container and today, as I took it out of the fridge, it was very hard, it looked and tasted like fudge. What did I miss? Did I cook it too long? (I did 30 minutes for a double recipe) or was the temperature too high? (I kept it at a quick simmer). Or is this expected and I can only use it warm? I warmed a portion, whisked it back together and it was fine, but as soon as I poured it over cold strawberries, it solidified again. Please help!

Does this make the same quantity that comes in a 14oz can?
So, I'm making this right now and used 4 cups of cream and 10 tablespoons of monk fruit sweetener because I thought I was actually using a 1 tablespoon measuring spoon (per the recipe I should have used 20 tablespoons for 4 cups). It seems sweet enough. I'm wondering if I have to cook this for 1 hour instead of 30 minutes.
Sweetners, honey, glucose, fructose are all still sugar. What is wrong with people?u think if u use sweetener or honey your body won't treat it like normal sugar? It will be the same result. If u want a change just reduce the amount of your sugar intake in a day and sugar is in cereals, bread,juices etc. Just check the ingredients
