    RECIPE: SUGAR & GLUTEN-FREE CHEESECAKE:
    Heat oven to 350-degrees. 
     
    For the Crust:
     
    2-cups Almond Flour
    3 TB Xylitol sugar substitute
    1 tsp vanilla extract 
    1/3 cup melted butter
     
    ** Mix together, then press into the bottom of a 9” springform pan, that you’ve sprayed with cooking spray.  Bake 10-minutes and set aside to cool.
     
    For the Cheesecake Filling:
     
    32-oz reduced calorie Cream Cheese 
    1 1/3 cup powdered Erythritol (it’s a sugar substitute)
    3 eggs
    1 tsp vanilla extract
    1 TB lemon juice, fresh squeezed
     
    Blend cream cheese & Erythritol until fluffy.  Add eggs one at a time. Add vanilla & lemon juice.
    Pour into cooled crust and bake 350 for about 50-minutes.  Middle will be jiggly!!!  Let cool, then place in fridge for 4-6 hours.  That’s where the cheesecake magic happens.
     
    Remove from springform pan, and place on a pretty cake stand.  Slice and serve with fresh sliced strawberries.  Love it!
