Would it work if after you got the vacuum you wanted could you turn the pump off and let it sit for the hour and also is there some way you could insulate the chamber

Could you try drying fruit in the vacuum chamber? I have seen big industrial operations that dry fruit at room temperature with a vacuum chamber, but could you do it at home with a rig like what you have? If it works, it would be like a faster version of freeze drying for some more robust foods.

for skittlesI just go to the leaf and turn on vac and heat for 30 min the to turn off the heat and vac and let it cool down under the vac that’s already in the chamber for like 15~20 min and then it’s all done.
Can the laser pointer work through he glass lid?
That's the Exact same brand vacuum chamber I got a year ago. Works great for canning never thought about using it for Skittles. Love Mine!!
Your going to have to use this vacuum chamber in marinating meat for your freeze drying. I hear it really impermiates the meat.
