    Thanks Bill, this is great timing. I have a container garden on my deck, and I’ve had a bumper crop of yellow crookneck squash this summer. So far, I’ve picked 14 tasty squash from just two plants, plus I’m growing jalapeños, tomatoes, and garlic chives as well. While I love summer squash in almost any form, my family is just not that enthusiastic about it. I end up hiding them in soups, sauces, stir fry dishes, and stews, but I think they’d approve of your recipe because it’s so flavorful.

    I’m definitely going to make this. I love the barrier layer of provolone between the squash and the filling – that’s genius. My only change would be to add grated garlic to the panko. It works great with my homemade macaroni and cheese. Thanks again!

    Great knife demonstrations. I have a tomato / onion chopping suggestion. Try doing the horizontal cuts first. You will be able to get 2 or 3, then the vertical cuts will be easy and you get more dice and doesn't have to deal much with the ends. At least that works for me 🍸
