I do something similar to this but without the bun as I’m diabetic and can’t really eat bread(which I really miss)

Looks scrumptious! Think I would have melted some of the cheese in the onions and mushrooms and sliced the onion into rings, that way the burger sits on better x

LOVE blue cheese or Stilton. I can't stop eating it when it's in the house! So I try to use it as a treat.I have a blue cheese dressing that I buy to dip veges in. This burger will be tried tomorrow , my husband will have his with Swiss cheese instead. What a lovely gift from your husband! So thoughtful too.
