I think you are wasting the spinach and throwing out the most nutritious part of the vegetable. I would saute some onions and garlic first, then put the InstantPot at STEAM (no steam rack) for 3-4 min with 1 cup water. Then use SAUTE function until the water just dries out. This would be a way more nutritious dish. Also I would not use silicone for cooking.
The leftover water would probably be great for herbal tea.
Putting any plastic, silicone, anything not stainless in a high pressure, high heat steamer is a no no. You can get a stainless steel steam kit depending on insta pot size on Amazon. 🙂
You could use that water to make rice with too. The rice will take on some of the spinach flavor as well.
