A Spamelet. I'd be more likely to use the Spam as a meat in an omelet if I had any. Seems to be gone all the time but the canned hams aren't.

Interesting recipe! I wonder if mixing some shredded cheese with the egg and rice would help keep the "filling" inside the SPAM rectangles?

What cute idea for the kids. Mine don’t eat eggs but they would try this. Rule in the house is take one bite if you don’t like it I’ll never ask you to eat it. 😊
This looks like it'd be fun to try but I'd be more likely to make it more like your scrambled eggs and make the whole thing into more of a scramble eggs with rice in it and the spam and some vegetables. I had actually never thought of rice much as an egg stretcher but it could probably be used pretty readily
