    As I said in the video, I often change up my sauce. It keeps things interesting in the kitchen and I encourage you to experiment often as well. Ricotta makes a very tender meatball and I recommend adding it to your meatballs. I'm pretty sure you will love it. The print recipe and ingredients are linked in the description.     Here's a fantastic tip for you. Add one quarter of a teaspoon of Cinnamon powder to your mixture…….JUST a quarter teaspoon and no more. It'll take those meatballs to another level again. Promise you will not regret it.

    I am anxious to try these meatballs because I can’t deal with tough meatballs. One pizza place in my area makes the best (soft) meatballs and people say they come from far away to buy them. I moved away from that neighborhood and I have done that.

    The first channel I am watching (and I am watching many) that gives specific amount of salt plus explains it. You can't underestimate the importance of the right amount of salt in your meals!

    We would like to see you do a blind taste test of ketchups. Personally, I think Heinz is way too sweet, and much prefer Sir Kensington's. There are a lot of regional artisanl ketchups that have arisen that eschew corn syrup, too. While James doesn't always have the vocabulary or palate experience, his honest reflections are edifying! I almost forgot: if I add an anchovy (or two) to my sauce, it ALWAYS gets a higher rating than if I don't. I prefer Carmelina brand tomatoes–nothing but tomatoes and puree.

    I dated an Italian once and his mom would make the most amazing fried potatoes in sauce with fried peppers. I still crave those 40 yrs later! As I’m always wondering what “sides” to serve with a pasta dinner (besides salad?) , I would love to know what your family eats as sides. I’ve tried numerous times to perfect rapinni, but I’ve given up. It always comes out bitter 😂 We’d be grateful if you could share some EASY sides (not main events lol)

    For meatballs: You should combine all ingredients except the meat; you can mix them thoroughly without risking toughening up the meat mix. Plus, you get even distribution of flavors when you add the meat. That’s how most professional kitchens do it. Thank you for your recipes & your dedication to Italian-American cuisine!

    I did this one more to see how well a quick sauce would turn out. Absolutely surprised when it was voted as the new favorite sauce by my taste testers.
    Followed almost exactly except substituted asian Fish Sauce for anchovies. I didn't have any…

    Crock Pot makes a 7qt Dutch oven modeled almost exactly in the dimensions of a Le Creuset for cheap. I think you might enjoy the extra cooking surface 🙂
