I have to get the skins off. I let them soak overnight, drain, put a dash of baking soda on for about ten minutes, rinse, drop into boiling water for ten, drop into cold water (by this time the skins are super soft and practically fall off but the pea itself is still firm enough to vigorously scrub together.) I use a mesh strainer and dump them out while adding water. All the peas stay on the bottom while I do this like I’m panning for gold until theres no skins left. Then I spot check a few with my fingers.) then they’re ready to cook. For flavoring I toss in a bay leaf, salt, and a smidge of bullion. Talk about perfection… if my hummus got any creamier I’d get sued by a cow.
I bought hummus from the store and it's soooo salty, it's inedible. (I'll use it for cooking instead) So I am waiting for your hummus recipe. I will be using my instant pot soon, I've had for 3 years and it's time now to take it out of the cupboard and use it!

The best way to cook chickpeas
I like using my stove top pressure cooker. It cooks much faster. I can cook it for 3 minutes and 5 minutes natural release.
