I just made stove top version using Turkey.
The 50/50 combo of beef and sausage would be GREAT.
I always add Worcester Sauce to season meat or tomatoes, along with sugar. My Mom did it that way. She usually added wine like you did. So good!
Together, they really make such a difference.
BTW, I stopped
topping my meatloaf; instead I prepare the ketchup, brown sugar and a few drops of apple cider vinegar, and mix right into the meat, along with the seasoned, milk, egg, bread. It's really tasty and easier (I'm inpatient sometimes!).

What is an alternative to ground beef/sausage? My stomach can not endure ground beef due to indigestion. London broil? Sirloin? Chuck roast?
You do not put the meat in before all other ingredients. I don’t know how the spices will penetrate inside the meat. Wrong way around cooking
