I'm Thai and I want to try that Thai inspired noodle. The noodle look like our "Kanom Jeen" Which is actually Thai-Burmese (Mon) dish. With tomatoes in the soup and the needle mushrooms does "look" like "Nam Ngeao" which is northern style of soup for the kanom jeen. The original is using Ngeao flowers instead of the mushrooms. It does look alike and probably have close enough texture. But then, Wild seafood appears. Seafood is more of the central, eastern and southern part of Thailand. Fried fish reminds me of Hakka noodle which is inspired from southern China that's been adapted and become famous in Thailand too.
Overall this dish is an amalgamation of more than 3-4 cultures in one.
Surprisingly, There are no noodle look like that Thai inspired one in Thailand. But the following egg noodle with wonton and the stewed beef noodle are both available everywhere in Thailand.
these two sound so similar they are like brothers from another mother. they both make a great team in presenting. I had the luxury of going to vn in august for a holiday and had pho Vietnam in district 7 in the hotpot….loved it I only wished they put more noodles in it as I was still hungry after haha
