Looks amazing! Have often seen cowโ€™s tongue at our local Mexican market but never known how to cook it. Thank you! Will be trying this soon, though I may have to wait to tell my wife what it is until after dinner. I am sure she will love it though.

Never tried beef tongue before. this recipe makes me want to! Question though. If I wanted to put it in my smoker for a bit how difficult is it to skin it first in its raw state? Also, out of curiosity is there a particular wood that you would gravitate towards to compliment the flavor of this dish?

I grew up with the tongue my mother made in our NYC Jewish kitchen, which scared me as a child seeing it in the simmering pot, but I learned to love the meat. When I lived in Mexico as a teenager, my family there never made it. Your tacos look delicious! Gracias!

Most lingua meat I've had is gross. I don't know it's so hard for taco shops to do. But, the ones that are not gross are DELICIOUS!!! I can't figure out the variance in quality.

I'm a 54 yr old Latino. My old man made THE BEST lengua in a gravy that one night I brought over a basketball team of hungry amigos that absolutely FEASTED on it! To this day they all order lengua at taco joints and most who don't serve it!

The tacos at Los Cocuyos were legendary. Nothing quite like sitting on that little stool on the sidewalk and chowing down on incredible tacos. But honestly the most memorable thing about that shop for me was how amazing the server was at remembering who ordered what, who sat down when, who was waiting, and everything. He knew every detail for all the ~20 people hanging out, and it was really impressive to watch.

The timing of this video is amazing! I just came back from Vegas today and I was told about a local taco place in Vegas down the street from where I was staying had tacos de lengua (along with cabeza, ojo, tripe) and I wanted to try one. It was the most tender and tasty I've even had. I actually thought they were better than the steak tacos. Wonderful, wonderful, wonderful!

Years ago (about two months before the earthquake and tsunami) I was on a business trip to Sendai, Japan, which is famous for tongue. It was served 6 ways in the same meal as a special presentation, and while I liked the flavor and texture of three of the preparation methods, the other three were VERY challenging to eat with chopsticksโ€“I'm sure you can imagine!

These are the BEST TACOS EVER!!!!! I have loved cows tongue since I was a little girl, mom used to make it all the time because it was such a cheap cut of meat. We would eat it just like a prime rib dinner.
