Always love watching and listening to you two together as much as the recipes. You know (and I'm sure you do) you can make your own version of Italian seasoning by starting with the individual spices. Pin down for sure which one Bunky doesn't like and then just don't include it. Because he has sensitive taste buds that can pick out that one spice I suspect there may be times you would have used more Italian seasoning to ramp up the Italian flavor in a recipe except you didn't because of that one spice. Once you've made your own seasoning, sans the disliked spice, in your recipes where you want the full Italian seasoning flavors you can make them full flavored without skimping. Imagine the Italian, Tuscan (yes, I know that's part of Italy too) even Americanized flavors "jusshe" it to the max.
I've seen you guys season with your heart, adding a little bit of this or that, to make things just right for you. Don't stop now guys. Make your own Italian spice blend.
