I made this and used all-purpose flour. I added 2-3 TBSP water. Also added 1 &1/2 teaspoon cinnamon, 1/4 all spice, 1/4 nutmeg, 1/4 ginger, 1/2 teaspoon ginger. Also I cut the sugar in half, just a matter of preference. Baked for 20 min. but maybe 15 would have been enough, it depends on the oven. I did not add the glaze to them. They were soft, chewy, cakey. Not that I like posting that I made changes to the recipe in any way to undermine the original. Everyone's preferences are different. In my opinion this recipe was great, not many ingredients, quick to make and an awesome eggless alternative. Thank you for sharing your recipe! 🧡💛💚💜💙
These look absolutely gorgeous!! I don't think we have canned pumpkin here in the UK.. I've never seen it before anyway! I made your marble cake the other day and lined the bottom of my cake tin with slices of pear… It was delicious! Thank you so much for your recipes ☺ Are you vegan? xx
i enjoy collecting cookie recipes.these look so YUMMY. i make pumpkin cookies and all inspiring tips are welcome.you have WINNER .thank you so much for sharing with us today.
Another great idea, Emi. I just might make these for a church program that we've been asked to bring cookies to. Can't get any easier and healthier than these! I have made pumpkin cookies before. I like to put raisins in mine and ice with an orange glaze. I bet you could replace the water in the cookie dough with unsweetened apple sauce. I do that a lot to reduce the oil in some recipes. Thanks for another great recipe!
