Hi Stephanie, thank you for this recipe. I have tried to make pinto beans in the IP twice now and my cooking liquid comes out super dark, almost to the point of unappealing to eat. I refry separately but my beans look dark after I refry them. I am not sure how to fix this problem, have tried using lighter beans still have the same problem. I know the IP infuses the bean stuff into the liquid but we are just not used to how it comes out thereafter compared to stove cooking method. Will try soaking first maybe next time. Ingredients 2 tablespoons bacon drippings or vegetable oil 1 cup chopped yellow onion 1/2 cup chopped cilantro stems 1 teaspoon cumin 1/2 teaspoon chipotle powder 1 pound dry pinto beans – sorted 4 1/2 cups water salt to taste Directions Saute onions and cilantro stems in 2 tablespoons of oil until the onions are translucent. Add cumin and chipotle powder. Stir in spices. Add sorted beans and water. Pressure cook for 40 minutes. Allow pressure cooker to release naturally, about 20 minutes. Taste beans and season with salt (I like about 1 1/2 teaspoons).
If you desire refried style simply mash beans with either a potato masher or a stick blender until the beans are smooth.
The problem is that these aren't refried beans, because you didn't fry the beans. You need to pressure cook the beans, and then fry them with the other ingredients. These are blended boiled beans
