We are on day 22 of a Whole30 and I was getting quite tired of the regular “safe” choices. I was determined to step out of my comfort zone yesterday and try something completely different. I gotta tell you, nothing about this soup sounded good to me at all, but for some reason (wife loves Kale) I just went ahead and made it. Publix didn’t have a white sweet potato, so I had to sub organic “purple” ones. It came out EXCELLENT, it’s almost laughable how much we enjoyed it. My 91 year old mom woke up this morning talking about it, and she doesn’t like anything out of the ordinary. Wife even commented that they had something similar at Olive Garden (she hadn’t seen yer video). Thanks for the great lesson!
