Great recipe! Here's a tip if you would like more flexibility to your grain cooking then think about a grain mill – lots of different models on the market! Buy organic "Dent" corn from a health food store and then grind grains/corn into any texture you like to make corn bread, grits or polenta not to mention flours from beans and grains. Opens a whole new world of possibilities.

Jill Nussinow has a polenta recipe in 'Vegan Under Pressure' I use for yellow stone ground grits and it works perfect every time. Five minutes at pressure, no babysitting. NOT quick grits, by the way, this is for the long-cooking variety that usually takes 45+ minutes on the stovetop. I've never followed the recipe as written, I just use the liquid to grits ratio and cook time. Yummy, creamy grits with absolutely no babysitting (I said that already, didn't I?). Try it! Infinite possibilities!
