    I forgot to ask you John…I've been wondering (and I know I'm going to probably regret asking this stupid question, lol!)….Could you please tell me why you didn't/couldn't add any eggs, or maybe even any powdered eggs to your pumpkin mix? Especially since you did bring your mix to a boil. That would kill off any salmonella from the eggs. ?

    I LOVED this video! I'm definitely going to make my pumpkin pies this way! What's really cool is that I just recently purchased two BIG pumpkins when I went grocery shopping at good old WM last week. I washed both pumpkins down, dried them, then baked them (whole–on a cookie sheet) in my oven at 400Β° F, for about 1 hr and 15 mins. They were fork tender, but still standing whole. After letting them cool for awhile, I cut the pumpkins into big chunks The outer skin easily peeled off for me. I pureed the pumpkin chunks in my Cuisinart. Jeeze, I ended up with two huge bowls full of pumpkin puree! I FD'd the pumpkin (4 trays full). I still had quite a bit of puree left over that I couldn't fit in the trays/FD'r, so I froze the rest. The puree FD'd really nice, but I did have some cold spots in the middle. So I ran it longer in the FD'r, but some cold spots still stubbornly remained. I think it was probably because my drum did have a lot of ice built up, I don't know. The rest of the pumpkin puree was totally dry. I removed the FD'd puree from the trays and put them in my dehydrator for a few short hours instead (have done this many times with my FD'd foods, whenever I have cold spots. It's so much quicker/cheaper [I think] and it frees my FD'r up for other things.)
    My pumpkin dried beautifully…the cold spots were completely gone. I ran all the dried pumpkin through my Cuisinart and powdered it, then sealed it in Mylar bags. So I now have powdered pumpkin ready to use for your recipe! Im kinda glad I did the whole pumpkin process as Ive been hearing folks say they haven't been able to find any cans of pumpkin or evaporated milk (mostly at their Walmart I think). (I know at our local WM, many of their shelves are pitifully bare!)
    I already have the Agar Agar on hand too! I'm SO excited to try your pumpkin pie recipe! Thank you so much for making your videos and sharing your knowledge with us! I've learned a great deal from you and your video's. The first thing I do now when I jump on YouTube is look for a new video from you to see what new food you've FD'd or what new recipe you've made!
